  • Tofu Chili

    As I become more aware of how eating meat affects my body, making me feel sluggish, acidic, and bloated, I decided to switch up the ground beef in my Chili and make it with something different. Yes, you can change to chicken or turkey but why not try Tofu?

    I make this tofu chili and freeze it so I can have meals on hand when I am too busy to cook. If you have never tried tofu before, this is a must try. I was inspired with this recipe by Canadian Living magazine. Their recipe was simple and easy just the way I like it. I tweaked it to my own taste buds. You can certainly add more spice if you like as well. I found it quit delicious and definitely would make it again.

    INGREDIENTS

    1 package of extra firm tofu
    1 tablespoon of olive oil
    1 large white onion (chopped)
    3 gloves of garlic (chopped)
    Sea Salt (salt to taste)
    Fresh ground pepper (to taste)
    Chili powder - 1 teaspoon
    Dried Oregano - 1 teaspoon
    Ground Cumin - 1 teaspoon
    1 Can of Diced tomatoes
    1 Can of red kidney beans - drain and rinse them
    2 cups of vegetable stock
    2 cups of grated carrots
    1 small can of tomato paste
    Fresh parsley1 Can of kernel corn

    DIRECTIONS

    Pat tofu dry with paper towels; cut into 3/4-inch (2 cm) cubes. In nonstick skillet, heat 4 tsp (20 ml) of the oil over medium-high heat; fry tofu, in batches and turning occasionally, until golden, about 5 minutes.

    Meanwhile, in large Dutch oven, heat remaining oil over medium heat; cook onion and garlic, stirring occasionally, until softened, about 4 minutes. Add chili powder, oregano, cumin, salt and pepper; cook, stirring frequently, for 1 minute.

    Add tomatoes, beans, stock, carrot, tomato paste and tofu; bring to boil. Reduce heat to medium-low; simmer, stirring often, until vegetables are tender, 30 minutes.

    Stir in corn; simmer until corn is heated through, 5 minutes. Stir in parsley and lemon juice.

    HEALTH BENEFITS OF TOFU

    Tofu is made from soybean curds and is naturally gluten-free and low in calories. It contains 0 cholesterol and is an excellent source of protein, iron and calcium. Tofu provides 44% of daily calcium needs, 9% of magnesium and 40% iron. It also contains a small amount of Vitamin K, Vitamin B-6 and selenium.

    Tofu comes in several different consistencies: extra firm, firm, soft, or silken. Firm and extra firm tofu is denser than soft or silken tofu, and retains more of its shape when cooked. This is best for grilling and stir frying. Soft tofu is better for casseroles and soups, and Silken tofu is best for puddings, dips and smoothies

    So next time you make your Chili- try it with Tofu. I really think you will enjoy it.

    today we celebrate the economic, political and social achievements of women past, present and future.

    I was happy to celebrate once again with the Women of York at NewRoads Girls Nite Out.
    What a great time was had by all and it was so awesome to see everyone again.
    A big shout out goes to the York Fire Fighters as always they are there to help with the fund raising.
    The event was a huge success thanks to Kelly Broome-Plumley and Michael Croxon

  • There Comes A Time

    Thank you to everyone who has taken time to comment on You Tube for my card/poem There Comes A Time. It has been nominated and is in the top 3 currently for A Women's Hope Magazine. The judging is based on You Tube comments.

    When I wrote this poem in no way did I think it would be known world wide. It has gone now to over 37 countries. The comments and emails I get regarding my poem on how it has changed lives is the most humbling thing that I have ever experienced. To hear that people keep this card by their bedside and read it daily so warms my heart.

  • Feeling Grateful

    As we move into the final week before the end of the year, I wanted to touch base with all of you and let you know I am grateful for all the interactions I have experienced this year with you through the website and monthly newsletter. I've heard great stories of people living a pain free life by simply choosing to eat a more alkaline pH balanced diet.

    One mom told me how she now packs better lunch boxes for her kids, and how her family actually now enjoys grocery shopping together and how they play the "Alkaline" Game in the store finding the right foods for a healthier lifestyle. One gal actually lost 20 pounds by using our pH alkaline/acidic sheet. Your body will go to its "natural state of weight" when you eat an alkaline diet.

    Through 2015 I will continue to share more simple, easy recipes and tips on how to live a healthier lifestyle. I will have more opportunities created with a "Win A Book Contest" as it seems like our audience is enjoying and looking forward to it.

    I just sent a book to Egypt and the U.K. which is very exciting indeed. Our website is now receiving over half a million hits and comments from over 37 countries.

    I love receiving emails from our global readers letting us know how simple recipes are making a difference. I welcome any feedback you may have on things you wish to see in our newsletter as your input is important to me and it is because of you that I am here. You inspire me to be greater.   • Giving Back To Women In Shelters

    As some of you will remember back in September we started a campaign for Healthy Balance - Shelters 2014 in support of the Canadian Center for Abuse Awareness. The goal was to get as many books into women's shelters so they could have a beginning foundation of eating a more alkaline, pH balanced diet, as this is one of the fundamental steps for healing. I want to give a Big Thank You to all of you who donated and participated in this campaign and let you know I am truly grateful to you for your gift of giving.

    It was a pleasure to be able to spend some time yesterday signing my book, Fabulous, Fit & Fantastic Living, Get to Your Natural State of Weight at the Canadian Centre for Abuse Awareness. It was so heart warming to watch their team in action sending packages, turkeys, and gifts to the women's shelters and families who cannot afford a Christmas. What they do at the CCAA is a huge eye opener of witnessing other people's reality and how there is so much we can do to make someone else's life better. This is something the CCAA does all year round, and not just for Christmas which makes it even a more special place close to my heart.

    The autographed books are on their way to women's shelters for Christmas and to those who donated $50 and above. I am feeling so blessed and grateful to have been a part of something, and to be able to give back in a small way. I hope it helps some women in shelters understand how eating alkaline, pH balanced is a small step in their healing. Living in a shelter might not always have the best of food however this is a beginning....
