  • Up Your Kale

    INGREDIENTS

    4 stalks of Kale
    3 Yams
    4 carrots
    25 Brussel sprouts
    4 celery sticks
    1 head of broccoli
    1 bag spinach
    1 bag green beans
    2 small onion
    4 gloves of garlic
    pinch of basil
    pinch of sea salt - season to taste
    Ground pepper - season to taste

    INSTRUCTIONS

    Leave the skins on the vegetables and cut everything up in small pieces.

    Boil the yams, carrots, Brussel sprouts for 5 minutes and use the water you boiled in to add into larger soup pot.

    Cut the rest of the ingredients and put directly into larger soup pot.

    Add 2 or 3 cups of water to larger pot once all ingredients are in pot and simmer for 40 minutes.
    Depends how large a pot you are using. Make it so there is a nice amount of broth.

    Stir occasionally

    Great way to warm your insides on a cold winter day and also get your alkaline vegetables

  • Friday Night Delight

    Friday Night Delight

    Sometimes after a long week Friday nights are the time
    for something quick and easy so why not make
    it healthy at the same time.

    Being prepared is half of the battle
    to having quick and easy meals so I
    like to pre cook the chicken and keep
    lots of fresh vegetables already chopped
    on hand for moments like this.

    INGREDIENTS

    3 Organic Brown Rice cakes
    Tzatziki- low fat
    fresh spinach
    1 tomato
    black olives
    shredded chicken breast

    INSTRUCTIONS

    Spread 1 tsp of tzatziki on rice cakes
    Put as much fresh spinach as you can
    chop 1 tomato
    chop black olives
    add shredded chicken breast.

    You can add some sea salt and ground
    pepper for taste

    Enjoy

    Great way to get some protein and alkaline
    at the end of the day

  • Measure Inches vs Pounds - Part 2

    So as the journey of eating healthier continues
    I wanted to share some good news with you.

    It's not always about your weight, it's
    about how you feel in your own skin.

    Sometimes you feel down after
    stepping on that scale and it seems
    like nothing is working.

    You are eating a more alkaline diet,
    you are starting to exercise, you watch
    those calories and that darn scale
    doesn't change

    If you measure yourself by your weight only
    you just might be cheating yourself out of
    an achievement you didn't realize was
    taking place.

    I decided to take some measurements the
    other day and realized I was losing inches
    instead of lbs.

    It's crazy how that number on the scale
    affects how we think, live, and feel.
    I have been the same weight for months
    now however didn't see that changes were
    taking place because my mind was focused
    on a number.

    Start to measure inches instead of pounds.
    Start to measure how you feel.
    Start to measure what your skin looks like
    Start to measure your energy level
    Start to measure all the great things going
    on instead of measuring weight

    I have to tell you that shopping for
    jeans has always been such a stressful
    experience.

    Most of my friends wear skinny jeans
    and even the thought of skinny jeans
    makes me feel confined.

    With much encouragement from women
    who love me I went on the adventure
    to find skinny jeans and was pleasantly
    surprised at what I saw looking back at
    me in the mirror yesterday.

    I even managed to find some high boots
    to accommodate my curvy legs.

    I encourage each of you to read more
    about alkaline vs acidic eating,
    Add more pH to your life, and
    start paying attention to your body
    not the scale

    I have lots of recipes on my blog
    and in my book to get you started.

    Measure Inches not Pounds

  • Losing inches vs pounds

    As we age the struggle to lose pounds seems to get
    greater as each year passes.

    How I remember those days when weight dropped off
    just as easy as it was put on.

    Our metabolism slows down and changes especially
    after menopause hits for us ladies and the ideas of
    losing that weight as quick as we gained it is not as
    easy as we would like it to be.

    I have been charting my weight loss and muscle mass
    as I do my best to eat a more alkaline diet and for the
    past month the scale stayed the same

    I however feel lighter in the mid section and on my buttocks

    So this morning I took out the measuring tape and I
    actually have lost a couple inches off both.
    The scale however said the same.

    I have been a bit hard on myself this past month
    thinking why isn't this working?
    So I am here today to share with you
    it's not always about what the scale says.

    I know, as humans we want to chart our success and
    say "hey I lost 10 pounds" however if you are losing
    inches and body fat and gaining muscle it will be
    a greater story to share.

  • Spelt Pasta Veggie Delight

    So quick and easy to make, for lunch or a light dinner
    Mix all ingredients in a big pot and transfer over to small bowl for serving.

    INGREDIENTS

    1 small box of Spelt Pasta
    1 can of 6 bean medley low sodium
    3 small stalks of celery
    1 small broccoli head-flower
    1 medium tomato
    1 small cucumber
    4 small romaine lettuce leaves
    Olive oil
    sea salt to taste
    ground pepper to taste
    1 scoop of medium salsa

    INSTRUCTIONS

    Boil the Pasta - not too soft so it keeps its texture

    Allow the pasta to cool to room temperature
    I put mine in the refrigerator for a few minutes to
    speed up the cooling.

    Chop up the ingredients in small pieces

    Put ingredients in a large pot and stir all together

    Mix in the cooled cooked pasta

    Add the olive oil, sea salt, ground pepper

    Mix it all up then transfer to another bowl
    Add the scoop of salsa and mix up

    Excellent way to get some Alkaline into your system!
