Breakfast Egg Muffins

Happy December...

Now that the holidays are upon us I was giving some thought to how to make your holiday breakfast quick & easy and with some alkaline. I know on Christmas morning with all the hustle and bustle the last thing you think about is making a healthy breakfast. Also having a meal you can throw in your bag to take on the road while visiting relatives is nice as well. There is no need to go hungry and what better way to eat your veggies as well

Home Made Breakfast Egg Muffins

My good friend Neelo's Kitchen shared this recipe and photo with me however I have tweaked it so it is 75% Alkaline and 25% Acidic so it's the perfect pH Balanced Breakfast or mid morning Snack.

INGREDIENTS

Chopped Spinach

Chopped Kale

Chopped Broccoli

Chopped Onion

Chopped Tomatoes

Black Ground Pepper

Green Chillies

Fresh Coriander

Grated Cheese of your choice (optional)

6 Omega Preferred Eggs

2 Tbsp Almond Milk

1 Muffin pan of 12 separate cups

DIRECTIONS

Preheat Oven to 400 degrees

Grease your muffin tin

Beat your eggs with the almond milk

Add your vegetables along with the cheese in each separate muffin pan

Pour beaten egg mixture on top of it

Place muffin pan on the center rack of a preheated oven and bake for 25 minutes or until muffins are light brown, puff, and the eggs are set.

Let muffins cool for a few minutes before removing from the muffin pan or cups. Loosen gently with knife if they seem to be sticking. Eat immediately or let cool completely and store in plastic bag in refrigerator or freezer. The Egg Muffins can be reheated in the microwave

The great thing with this recipe is you can chop up all your ingredients the night before so all you have to do in the morning is mix your eggs up. You can also mix up your ingredients if you like for unlimited possibilities.

Great as well for your children to take to school for a mid morning snack and a dose of healthy vegetables. Much better than the standard carbs for breakfast.

I hope you give this recipe a try, not only for Christmas morning, but all throughout the year. It is packed with lots of vitamins, minerals, and protein and a Super Yummy and Fabulous Way to start your day!
